Under the trade profile rice is evaluated according to the size of the grain and according to the limits of tolerance allowed and established by law. In the international trade, the distinction is mainly depending on the length of the grains. the Italian legislation provides 4 classes: “Comune o Tondo, Semifino, Fino e Superfino”. Common: is a round rice grains with a length of less than 5.2 mm and with a relationship between length and width of less than 2. Variety covered: Balilla, Elio and Selenium.
